When Rosario Cárdenas first opened her restaurant, her biggest fear was that people wouldn’t want to try the Peruvian dishes.

But 14 years later, Rosario’s Peruvian Restaurant, tucked in an unassuming strip mall in Longmont, has become an award-winning staple of Peruvian cuisine on the Front Range.

“The road has been really long and hard to get here, but we’ve been able to open up the restaurant and share food with not just American people but people from other countries, and make Peruvian food more well known,” Cárdenas said in Spanish.

Estefany Martinez, Cárdenas’ daughter and a server at the restaurant, says she loves seeing customers who aren’t Peruvian come in and explain classic Peruvian dishes such as lomo saltado and ceviche to friends and family.

“They’ll talk about Peruvian food as if they were Peruvian, and they’re so excited to share with their friends and family,” Martinez said. “I think that’s also something that’s really rewarding, because you’re sharing your culture.”

Whether at Rosario’s in Longmont or atop a hotel in Denver’s RiNo district, Coloradans can find a taste of Peru without leaving the Front Range. The cuisine is also well represented on the world stage, with Peru home to four of the top 50 restaurants in the world.

“I’m blessed to have been born in a country where the culinary scene is so well known and so good,” Cárdenas said.

‘Tour around Peru’

Cárdenas has always been passionate about cooking, so when she moved to the U.S. in 2002 and couldn’t continue being a teacher, she dreamed of opening a restaurant.

“I really wanted to share my food with people so they can find out what Peruvian food is like,” she said.

Rosario’s opened in 2012 in Dacono, serving both American and Peruvian dishes. About a year and a half later, they moved to their space in Longmont at 625 Ken Pratt Blvd. and focused entirely on Peruvian flavors.

The Longmont spot is now widely loved both by Peruvians, who say the food reminds them of home, and by those who haven’t tried the cuisine before, Cárdenas said. Taking to online channels like Reddit, one will almost always find Rosario’s recommended, and the restaurant has been recognized as the best Latin American restaurant in the Best of Mile High awards three years in a row.

Peruvian food is unique, Cárdenas said, in part because of the influence from other cultures — the Italian, Cantonese, Japanese and Spanish. It also boasts unique flavors.

“We have a lot of unique ingredients that we use, like our ají amarillo, rocoto chillies, huacatay sauce,” Cárdenas said.

Rosario’s sources these ingredients from Peru, something that’s become easier as more people take an interest in Peruvian food, Cárdenas said.

The ingredients aren’t the only thing coming straight from Peru. Peruvian art and trinkets the family has brought back from trips to the country adorn the walls and shelves near the entrance. Colorful pompom garlands hang from the ceiling, and music plays in both English and Spanish.

Diners have a wide variety of dishes to choose from. There are the classics, such as lomo saltado — a juicy stir-fry with steak, onions, tomatoes and soy sauce that’s served with fries and rice — and ceviche, a seafood dish of fish marinated in lime juice. But diners can also find lesser-known dishes such as papa rellena — a crispy, fried potato stuffed with ground beef and egg.

To drink, customers can enjoy chica morada, a sweet, deep purple drink that Martinez described as classically Peruvian and a “summery Christmas drink.”

For those feeling indecisive, Cárdenas created “tours,” which allow diners to try smaller portions of three different dishes. “I want people to almost take a tour around Peru and Peruvian gastronomy,” Cárdenas said.

Pablo Aya, the culinary director for the Colorado-based Hispanic Restaurant Association, said part of what makes Peruvian cuisine unique is the country’s culture and its geography.

“This is a country really based on its roots. They’re rich in history and culture, and that culture gives them recipes, ingredients and cooking methods,” he said.

Aya, who is Colombian, says Peruvian chefs such as Gastón Acurio Jaramillo are helping to elevate Latin American cuisine as a whole. “He transformed Peruvian food and made it approachable and made it tasty and made it better. In the long run, Peruvian, it’s helping the transformation of Latin American cuisine. It was the first one who jumped into the waters and (said), ‘Hey, here I am, and we’re different, and we don’t have to make bechamels or we don’t have to make beurre blancs.”

Newer to the Peruvian food scene is chef Geoff Cox of Denver’s Cimera. The Pan Latin restaurant, perched on the rooftop of the Source Hotel at 3330 Brighton Blvd., opened just last fall. Cox, formerly the chef of Denver’s Hop Alley, works closely with Diego Muñoz, a renowned Peruvian chef who helmed the country’s Astrid y Gastón when the restaurant was No. 14 in the world.

“(I) spent 10 days in Peru eating around (Lima) and learning a lot about the cuisine and just fell in love with it immediately,” Cox said. The cuisine is unique because it’s a “mashup of cultures,” and Peru boasts so many different biomes in one area — with the Andes mountains, the ocean, and tropical areas.

“The chili peppers, oh my gosh, the chili peppers are so unique in their sweetness and their depth of flavors and spice,” Cox said.

While he’s new to the scene, Cox is eager to share Peruvian flavors with others. “Everyone’s been super friendly and welcoming. I think they want to celebrate their cuisine and share it with as many people as possible,” Cox said. “I’m just excited to share it and be a part of it,” he added.

After winning their most recent Best of Mile High award, the Rosario’s team went to Cimera to celebrate, Cox said. “They gave us a stamp of approval that they thought we were doing a good job. That meant a lot.”

Longmont, CO set to vote on ranked choice voting in November

On July 14, the Longmont, CO City Council voted 6-1 to put a ranked choice voting (RCV) measure on the November 2026 ballot. If the measure passes, RCV will be used in Longmont elections for mayor and City Council beginning in 2029.

With Longmont’s current “choose-one” voting system, candidates can win crowded elections without a majority of the vote. Since 2023, there have been four municipal elections in Longmont where no candidate secured a majority of the vote. With ranked choice voting, candidates would enter office with majority support and a stronger mandate to lead.

Ranked choice voting also gives voters greater ability to express their preferences without splitting the vote, and reduces potential negative campaigning. In RCV elections, candidates are rewarded for finding common ground with their competitors, and seeking backup-choice support from voters ranking another candidate first on their ballot.

Pending release of technical guidance from the Colorado Secretary of State’s Office, Longmont would also implement multi-winner RCV – a form of proportional representation that ensures nearly all voters elect candidates of their choice.

At the City Council meeting, Ranked Choice Voting for Longmont co-founder Dillon Rankin said:

I am just of the opinion that our gold standard election system deserves a gold standard voting method to go with it… [ranked choice voting lets you] rank your candidates honestly, as opposed to strategically.

The ballot measure will be read again on August 11 and 25 to formalize its language, before being placed on the ballot.

RCV already has a track record of success in the Centennial State. It is used in five Colorado cities – including one of Longmont’s neighbors, Boulder. Colorado Governor Jared Polis has endorsed RCV, and signed legislation in 2021 to help more cities adopt it. Polling shows that wherever RCV is used, voters like and understand it.
