MCLEAN, VA — Fairfax County health inspectors cited 10 McLean-area food establishments for violations between July 1 and July 16, according to public inspection reports. Findings included a dish machine with no detectable sanitizer, fruit flies, food stored at unsafe temperatures and raw food above ready-to-eat items.

Inspectors also reported missing employee health policies, plumbing problems and unavailable food-safety equipment. Several establishments discarded, reheated or relocated food during their inspections.

Inspection reports reflect conditions observed at the time of each visit. Many violations were corrected before inspectors left and do not necessarily represent ongoing conditions.

July 1 Inspections

Brue Coffee8000 Westpark Drive, McLean, VA 22102 Inspection date: July 1

Inspectors found a gallon of milk held overnight at 48 degrees in a display cooler. The milk was discarded during the inspection. The cooler was operating at 44 degrees and could not maintain food at the required temperature of 41 degrees or lower. Staff were told not to store food requiring temperature control in the unit until it was repaired and to provide proof of service within 10 days.

Magic Crepes & Ice Cream1961 Chain Bridge Road, Kiosk 60U, Level 3, McLean, VA 22102 Inspection date: July 1

Inspectors saw the certified food manager crack an egg and then begin cooking without first washing hands and changing gloves. The manager washed and changed gloves during the inspection.

The establishment lacked a complete employee health policy and written procedures for responding to vomiting or diarrhea; inspectors provided the necessary documents.

Milk stored overnight in a cooler measured between 44 and 45 degrees and was discarded. The cooler was operating at 44 degrees and required service.

Inspectors also found no air gaps between the three-compartment sink’s drain lines and the grease trap; cups blocking the gaps were removed during the inspection.

The menu lacked a required warning for egg dishes that could be served undercooked, and fruit flies were observed in the food-preparation area. Pest-control service and a revised menu were required within 10 days. A coffee mixer stored in 73-degree standing water was moved to water measuring 183 degrees.

Inspectors cited a repeat cooling violation after finding boneless wings at 52 degrees and cooked wings at 44 degrees after each had been stored for five hours. Both were discarded. A nine-drawer preparation cooler was operating at 52 degrees and required urgent service. Staff were told not to use it for food requiring temperature control until it was repaired. Inspectors also found a defective faucet at the three-compartment sink. Both equipment violations were repeat findings.

Scolapasta2001 International Drive, McLean, VA 22102 Inspection date: July 2

Chicken held at 116 degrees in a steam table for about an hour was reheated to 172 degrees. Inspectors also cited the restaurant for failing to provide signed employee health-policy documents, a repeat violation; English and Spanish reporting agreements were provided. A kitchen hand sink had leaking plumbing, and no chemical sanitizer was available for equipment and utensils. The sanitizer violation was corrected when the manager ordered quaternary ammonia during the inspection.

July 7-8 Inspections

Inspectors cited repeat cooling violations involving cooked chicken at 47 degrees after being stored overnight, seaweed salad at 54 degrees after four hours and bean sprouts at 48 degrees after about five hours. All three foods were discarded. The walk-in cooler was operating at 46 degrees and required urgent service. Staff were told not to use it for food requiring temperature control until it was repaired.

Chef Tan132 Branch Road SE, Vienna, VA 22180Inspection date: July 8

The restaurant’s chlorine dish machine produced a sanitizer reading of zero parts per million, and inspectors also obtained zero readings from both containers of chlorine sanitizer. Staff were directed to stop using the machine and instead wash, rinse and sanitize equipment in the three-compartment sink with bleach until the machine was serviced and reached at least 150 parts per million.

Inspectors also found raw eggs stored above sauces, onions and celery, along with raw pork above cooked chili peppers. The report marked the repeat violation corrected during the inspection. Other findings included a repeat incomplete employee health policy, missing written procedures for vomiting and diarrhea, and no thermometer capable of measuring cold food. A hose splitter without an approved backflow-prevention device was removed from the mop sink.

Boxes of frozen meat thawing beneath a preparation counter were moved to the walk-in refrigerator. Cardboard lining a shelf was removed, and staff were directed to post a handwashing sign at a cook-line sink. The establishment was scheduled for a follow-up inspection concerning the missing cold-food thermometer.

Inspectors reported that no certified food manager was present, a repeat violation requiring a follow-up inspection. Recently sliced tomatoes at 50 degrees were cooling in the top of a preparation refrigerator, an inadequate cooling method. Staff moved the tomatoes to the walk-in refrigerator to cool to 41 degrees or lower.

McLean Racquet & Health Club1472 Chain Bridge Road, McLean, VA 22101 Inspection date: July 14

Inspectors found that the breakfast menu lacked a required consumer warning for eggs that could be served undercooked with avocado toast. A follow-up inspection was planned within 10 days.

Plumbing beneath a cook-line hand sink was leaking, and the grease-trap lid was in poor condition. The person in charge said the items would be repaired, and inspectors planned a follow-up visit within 10 days.

Inspectors found sliced cheddar, American, pepper jack and provolone cheeses that had been prepared July 7 and kept for more than seven days. The cheeses, which measured between 45 and 47 degrees, were discarded.

The club also discarded lettuce, salad greens, cream cheese and sliced cheeses that had failed to cool to 41 degrees within the required time. Three coolers were operating at temperatures ranging from 43 to 48 degrees. The units required urgent service, and staff were told not to use them for food requiring temperature control until they were repaired.

Inspectors also found that the menu did not properly identify Chinese five-spice tuna as raw or undercooked and lacked a consumer warning for the All-American breakfast. Menu revisions were required within 10 days.
