What's happening at your internship? We would love to hear what kind of work you are doing!

I work in the survivor services department, where we work to connect survivors of human trafficking, torture, and domestic violence to social, health, and legal resources. I work under the case managers and primarily have been compiling resource lists for clients and reaching out to community organizations, then following up by meeting with clients to go over the resources and provide any emotional support I can as well. In addition, I do screenings for survivors of torture and financial aid-based screenings to help assess clients’ needs and how the program can best support them.

Why did you apply for this internship?

Last summer, I had an internship at an immigration law firm, and while I did enjoy that, I wanted to explore a more social approach to justice and work more one-to-one with clients as opposed to doing a primarily research-oriented internship.

Can you talk about the skills you are learning and why they are important to you?

I have been learning a lot of skills relating to trauma-informed care and how to talk through emotionally complicated situations with clients with the goal of making an action plan. I have really been enjoying learning the trauma-informed care techniques because I feel like I am able to better communicate with clients and approach each situation in an individualized and empathetic way. A lot of the time, we are talking about some issue relating to a past or present trauma, so it is empowering to know how to properly take that information and use it to inform an action plan for the client.

What has been the biggest challenge you have faced at your internship?

The biggest challenge with this work has been knowing that I can’t make everything better instantly. There are no easy fixes that address the complexity of the client’s needs, and it was difficult to come to terms with the fact that clients will not always leave in a better situation than they arrived in. I know that each piece of care that we offer is helping to some extent, and that has been really keeping me encouraged. However, it is still challenging knowing that there is no magic wand that will magically fix all of the problems at hand.

CVS Health will add more than 2,000 new COVID-19 drive-thru testing sites at CVS Pharmacy locations across the country.

The company said it is expanding its testing capacity in anticipation of a potential second wave of the virus and once the new locations are open CVS will have more than 4,000 locations.

The new locations will open in waves over the next several weeks and will have sites in 33 states and Washington, DC. The first 400 additional locations will open on Friday including 27 in Pennsylvania.

Among the 27 new testing sites are locations at 123 Gettysburg Pike in Upper Allen Township and at 560 Old York Road in Fairview Township., York County.

CVS’ Self-swab tests are no cost to patients with insurance or through a program for the uninsured funded by the U.S. Department of Health and Human Services, and are available to individuals meeting Centers for Disease Control and Prevention criteria. Patients must register in advance at CVS.com to schedule an appointment. A parent or legal guardian must complete the online registration for all minor patients, and patients 12 to 15 years of age must be accompanied by a parent or legal guardian when they come to be tested. When the patients arrive at the store, they will be provided with a test kit and given instructions, and a CVS Pharmacy team member will observe the self-swab process.

CVS says that in most cases test results are available within two to three days.

“Since opening our first test site in March, we’ve been able to quickly adapt to the changing landscape in order to make it easier for people in the communities we serve to access testing,” Jon Roberts, chief operating officer at CVS Health and acting President of CVS Pharmacy said in a press release.

CVS currently has testing 69 testing sites in Pennsylvania including locations at 5001 Jonestown Road in Lower Paxton Township, 550 N. Progress Ave. in Susquehanna Township and at 6706 Carlisle Pike in Silver Spring Township.

Northern Liberties is home to a new Instagram-chic Italian spot that is so cool, it's in its name.

Figo, or cool in Italian, is an elevated full-service restaurant and bar.

Pretty Girls Cook is all about looking good but tasting better

Teacher turned caterer Dominique Shields just celebrated the five-year anniversary of her Northern Liberties restaurant, Pretty Girls Cook.

The restaurant serves up eclectic food and recipes that Shields has learned throughout her career.

From the restaurant's biggest hit, the Ladies Love Salmon, a grilled salmon fillet with their homemade confetti rice, to the Make 'Em Shout Brussel Sprouts, with bacon, candy pecans and goat cheese.

Pretty Girls Cook also offers Sunday brunch with their Wake and Bake deep fried French toast breakfast sandwich and homemade juices for you to enjoy at their BYOB.

The décor is dedicated to the powerful women on the walls and the color pink.

Shields says she wanted to create the vibe in her restaurant to be inclusive and about women lifting each other up.

Caphe Roastersin Kensington is Philadelphia's first Vietnamese

"Caphe Roasters is the first and only Vietnamese coffee shop in Philadelphia," says co-Founder Thu Pham.

They're also a café, serving up modern Vietnamese dishes.

Caphe means coffee in Vietnamese. Their signature drink is the Ca Phe Sua Da made with their Vietnamese espresso blend and slowly dripped over sweetened condensed milk. They use a Vietnamese filter called a Phin in the interactive brewing process. Thu says it makes for a strong, robust cup of coffee. The Avocado Coffee is part of the rotating menu and is like an avocado smoothie.

Chef Jacob Trinh is a first-generation Vietnamese American and draws from family recipes to create the menu.

He takes the Vietnamese style hoagies of his childhood up a level.

There's the OG Bahn Mi made with house-cured Vietnamese ham and chicken liver pate. There's Fried Chicken Bahn Mi with a Gochujang glaze, minus the pate. And eight spice wings called Tam Gia Vi Wings, made with citrus, seaweed, sesame seeds and other spices.

Caphe Roasters also offers desserts, including ice cream available year-round. It's made with sweetened condensed milk, an important part of the culture. You can even make a latte float.

Revitalizing the Kensington neighborhood is a mission of Caphe. They donate a portion of their proceeds to a non-profit education group called 12 Plus, while growing the Vietnamese coffee movement.

Meet the Philly Cookie Company: new maker of savory shortbreads

You may have spotted a new kind of cookie in your favorite local coffee shop.

It is the pandemic project of Loc Pham, a baker turned entrepreneur during the COVID-19 lockdown.

When the world went on lockdown, he had nothing but time on his hands. So he created a collection of shortbread cookies and granola bars. He now has 11 flavors, including ones that are vegan and gluten-free.

He officially launched his Philly Cookie Company on Feb. 1.

Born in Vietnam and raised in South Jersey, Pham started baking as a little boy.

By the age of 16, he was working in pastry shops and graduated from Drexel University with plans to get a job in the food manufacturing industry. But, he says, "I hated it."

His passion is baking things by hand. So he went to work for a bakery where he continues to work full time from 4 a.m. to noon. Then, when his shift is over, he works another eight hours for himself.

His recipe is based on a traditional Scottish shortbread but he adds brown sugar and sea salt to create more of a savory flavor that is the perfect companion to your coffee.

Pie Bird Farm uses historic Bucks County property to produce pies

Jennifer Brodsky and Eric Theesfeld are adjusting to life on the farm.

The couple have moved onto the historic Haney Farm in Bucks County and converted the property into Pie Bird Farm.

Jennifer is an avid farmer. Born in Philadelphia, she spent a year in Ireland working on a farm and has spent the last two decades dedicated to farming. Along with her husband they are hoping to turn the property, which had been abandoned for five years, into a productive farm including fruit and grain crops.

In the meantime, they have converted the farmhouse into a bakehouse. They are handcrafting pies using local and organic ingredients. The apple pie weighs in at four pounds.

You can see hunks of organic butter in the crust. And the pumpkin pie is a special blend of heritage squash and ginger beer. The Thanksgiving pie is a savory dish that takes all your holiday favorites and puts them in a pie topped with a mashed potato crust.

Former Marine opens Semper Pie to give back to military

Kevin Murphy never imagined he would be making cheesecakes for a living. But Semper Pie is an American dream come true for him and his wife Crystal.

The former Marine was medically discharged in 2012 after serving four years with two tours in Afghanistan. He worked some odd jobs as he transitioned from military life. For Thanksgiving in 2020, his wife Crystal made a cheesecake to celebrate the holiday with family. The couple decided to turn that apple pie cheesecake into a business.

Kevin and Crystal started making cheesecakes out of their house and selling them online during the pandemic. They got shut down, so they found commercial kitchens that could work as ghost kitchens. Eventually, they found a storefront of their own in Boyertown, where they are now working together to build a menu of cheesecakes at Semper Pie.

The apple pie is the original and still on the menu.

They rotate flavors each week. There is always a keto and gluten-free option on the menu. The pies are four inches with nine-inch options available for pre-order.

They have brownie bottom, monster cookie, strawberry and chocolate banana.

Every pie they sell comes with a 22-cent donation to a local military cause.

Home chef brings Middle Eastern street food to South Jersey

During the pandemic, home chef Mia Eylon began posting weekly prepped meals for porch pick up on social media. Her business was a huge success. Mia was encouraged to follow her dream and open Mia's Meals Falafel Bar in Haddonfield, NJ in June 2021.

Falafel is a fried, Middle Eastern fast food.

"The falafel ball is crunchy on the inside and definitely moist on the inside. It's delicious," says Mia Eylon, owner of Mia Meals Falafel Bar.

She offers the traditional falafel entrée as pita, bowl or salad. Each features hummus, Israeli salad, Israeli pickles, and tahini.

"What makes me happier? Seeing people enjoy what they eat, that really like makes my heart really full and the more they eat the happier I am," adds Mia.

Also on the menu are customer favorites, shawarma fries and a refreshing tahini shake.

Penn Museum dresses up for a look at fashion through the centuries

What could an anthropological museum have to say about fashion?

As TaRhonda Thomas found out, quite a lot - over two thousand years worth.

The current exhibit at The Penn Museum in University City shows fashion through the ages in The Stories We Wear.

On display are outfits and objects covering five themes, looking at outfits worn for everything from performance to sports. Ticketing is included in the price of admission to the museum, and the exhibit will be on display through June 12, 2022.

Ave Maria Retreat Center, which has been in operation since 2000, is located on the grounds of the National Shrine of Our Lady of Czestochowa in Doylestown. Directed by the Pauline Fathers and Brothers, the center accommodates day, overnight and weekend groups of up to 75 for retreats, days of recollection or reflections and conferences. Single, double and triple rooms are available.

Many groups bring their own priests, and of course Masses are offered daily at the shrine.

“While 98 percent of the people who come are Catholic, we do get people from all denominations,” said spokesperson Helena Masiorski. “We get people from all over the world.”

In addition to the Ave Maria Retreat Center’s schedule, there are many very large day events conducted at the shrine’s conference center, Masiorski said.

The Basilian Spirituality Center, located at the Convent of the Sisters of the Order of St. Basil the Great in Philadelphia’s Fox Chase section, concentrates on one-day retreats and can accommodate up to 120 in two conference rooms, according to director Sean McLaughlin.

What sets the center apart is its ability to convey a sense of the universality of the church. The sisters are members of the Byzantine Ukrainian Catholic Church. While they are not Roman Catholic, their church is in full communion with the Holy See.

A visit to their chapel exposes a person to another side of Catholicism, and their Divine Liturgy contains the same essence as a Roman Catholic Mass, in that the bread and wine are truly transformed into the Body and Blood of Christ.

”We will do a teaching Mass if people want to learn the Divine Liturgy of St. John Chrysostom,” McLaughlin said. “It is an example of what Pope John Paul II meant when he said, ‘the church breathes with two lungs.’”

The center is ideal for parish groups or school groups who want to sample the stunning architecture and liturgical beauty of the Eastern tradition, so much different from, yet similar to, Roman Catholicism.

Cranaleith Spirituality Center, a ministry sponsored by the Religious Sisters of Mercy, is located at 14875 Proctor Road in Northeast Philadelphia.

Founded by Sister Mary Trainor, R.S.M., it is located on what was once her family’s 10-acre estate.

Although most of its programs are day sessions for up to 80 people, Cranaleith does have limited accommodations for overnight or longer, private or directed retreats for both adults and youth. The center also features a wide range of programs supporting spiritual growth.

In keeping with the R.S.M. order’s charism, most (but not all) of the spirituality programs conducted at Cranaleith focus on social justice concerns such as immigration, nonviolence and women’s issues.

“We try to serve and reach those on the margins,” said Sister Kathleen McCauley, program director at Cranaleith. “It is … also to have a place where people from the two extremes, the haves and the have nots, can meet.”

Daylesford Abbey Spirituality Center, located on a peaceful 80-acre property in Paoli, hosts a variety of conferences and retreats, ranging in length from a few hours to a week. The Norbertine Fathers at the abbey, who direct the center, conduct several of the sessions although a group may bring its own spiritual director or conference leaders.

For overnight or longer stays, the abbey can accommodate up to 70 guests in 35 rooms. Day programs can accommodate much larger groups, with ample dining facilities available for larger groups.

Fatima House Retreat Center in Bedminster (near Ottsville, Bucks County) is conducted by a vowed lay group of single and married members, the Apostleship of Our Lady of Fatima, which according to president Jim Black was founded in 1958. The center conducts day programs for up to 50 participants, and overnight retreats for 12 in two houses.

While the Blessed Sacrament is reserved in a small chapel, with special services on the first Saturday of the month, visitors may attend Mass at either nearby St. John the Baptist Church in Ottsville, or just minutes away at Our Lady of Czestochowa Shrine in Doylestown.

The IHM Conference Center, located on the grounds of St. Aloysius Academy in Bryn Mawr, can accommodate about 50 people for day programs, according to director Immaculate Heart Sister Marie Gipprich.

“Our focus is on day retreats for parishes, parochial schools and private schools, as well as days of spirituality,” she said. “We can provide continental breakfasts and also hot lunches prepared by our staff.”

The IHM Spirituality Center, located across from Immaculata University in Immaculata, hosts overnight retreats and can accommodate 38 guests in single rooms. The center welcomes people of all faith denominations, and meals are provided. Groups supply their own retreat director or spiritual director.

Malvern Retreat House, Malvern, is at this point the oldest Catholic retreat house in America and by far the largest. It was founded in 1912 and remains lay owned and operated with the endorsement of Philadelphia’s archbishop. Its unusual success may be attributed to its adherence to that single purpose — conducting retreats and other spiritual exercises — and never diverting resources or personnel for other worthy purposes that are not part of its charism.

In the beginning that meant running well-organized weekend retreats for men. That has expanded to include retreats for women, for married couples, for youth, for priests and religious, as well as Matt Talbot retreats, vocation retreats and others including single-day programs every day of the week.

Malvern serves well over 20,000 retreatants a year, according to Anne McGlone, the director of marketing. It has sleeping accommodations for 400 and some of the specialty retreats draw people from around the world. “We are open year-round, and we have people here every day,” she said.

St. Mary of Providence Center in Elverson is a ministry of the Daughters of St. Mary of Providence who host retreats in two buildings on their campus, according to Sister Kathy Stark.

“Our bread and butter are weekend retreats,” she said, explaining one building can house 60 people, the other 55. But there are also a number of day retreats, especially for high school students, three- and four-day retreats and even week-long silent retreats. The center has two chapels, also outdoor stations of the cross and a Rosary Garden but not all groups coming are Catholic, Sister Katy explained. “We can accommodate people of all different faiths,” she said.

As with many others, St. Mary of Providence does not provide retreat masters, the groups bring their own.

The Shrine of St. John Neumann at St. Peter the Apostle Church in Philadelphia is not a retreat house but by its very nature is a draw for day pilgrimages and retreats by Catholic schools, plus teachers’ retreats, according to Redemptorist Father Raymond Collins the shrine’s director.

The shrine does not have cooking facilities, but it does have a dining area at the St. John Neumann Center. Groups typically bring their lunch or the shrine can recommend a nearby caterer if needed, said Father Collins. A visit to the tomb of St. John Neumann would always be part of the experience and a recent addition is the Redemptorist Archives with many historic artifacts.

Mother Boniface Spirituality Center, a ministry of the Missionary Sisters of the Blessed Trinity on Solly Avenue in Northeast Philadelphia, conducts weekend retreats on about 40 of the 52 weeks of the year. There are also day programs including spiritual direction, according to the director, Edel Finnegan, and the center can accommodate more than 60 guests for retreats.

There are programs in English and Spanish and the focus is on evangelization in Philadelphia. “We also run programs for people in danger of losing their faith and the poor in spirit,” she said.
