Dairy With On-Farm Processing Shines Light on New Jersey Milk Production

PITTSTOWN, N.J. — Dan Lyness has only been a dairy farmer for eight years, but he’s carving out a niche for himself in New Jersey.

Lyness hosted state Ag Secretary Douglas Fisher on June 10 for a celebration of Dairy Month.

Lyness started Spring Run Dairy in 2013 and began bottling his own milk a few months ago.

He caught the dairy bug at Delaware Valley University in Pennsylvania, where he milked in the ag college’s dairy barn.

Lyness’ parents, Gerry and Nancy Lyness, raised beef cattle, keeping 50 to 60 cow-calf pairs, and he found that dairy offered more of the hands-on cow work he enjoyed than beef production did.

“From growing crops, feeding them every day, milking them every day, breeding them, it’s the whole gamut of cattle work that really drives me,” Lyness said.

With Farm Service Agency financing, Lyness built a tie stall barn. While a freestall would be more efficient for a big herd, the tie stall allows for close management of the farm’s 50 cows, he said.

Seeking high component production, Lyness began with an all-Jersey herd. He has since added some Holsteins to feed his and fiancée Sarah Phillips’ interest in showing cows.

“There’s not so many Jersey shows around here,” Lyness said. “Everybody has Holsteins, so if you want to show cows, you own some Holsteins.”

The couple have competed in the state Holstein show and in several New York events.

Lyness’ newest way to stand out, the on-farm processing plant, was born out of necessity.

Dairy Farmers of America imposed a base program early in the pandemic last year.

Lyness’ production was very low in the month the co-op selected as the benchmark, so he needed something to do with his growing production above base. Direct marketing fit the bill.

“Instead of them taking my excess milk and charging me for it, I’m just bottling it myself,” he said.

Lyness now bottles about 20% of the milk he produces and ships the rest — almost 4,000 pounds every other day — to DFA.

Lyness and his family process and package the milk in a shipping container next to the dairy barn. The unit was outfitted as a creamery by Don’s Dairy Supply of South Kortright, New York.

The structure is insulated and has plastic walls, a concrete floor with drains, and stainless steel equipment. Fifteen feet of the container’s 40-foot length is a walk-in cooler.

Lyness processes the milk directly from the bulk tank without adjusting the fat level.

“Whatever our cows are producing at the time, that’s what’s in the bottle,” Lyness said.

As a result, Spring Run Dairy milk has more than the 3.25% fat content that is the standard for supermarket whole milk.

“It adds a little more flavor, a little extra taste,” he said.

His milk is different from commodity milk in other ways too. It’s pasteurized for 30-plus minutes in batches of 90 to 100 gallons rather than heated at a high temperature for a short time — the procedure used in large dairy plants’ continuous-flow systems.

And Lyness’ milk is unhomogenized, so each bottle comes with a “shake well” recommendation.

A few months into his new endeavor, Lyness added a third day of processing per week. He and his family do two batches of white milk and one of chocolate.

“My mom and I and my father, we all spend a lot of time in here getting the product out,” Lyness said in the small but spotless shipping container.

Some of the milk is sold through a self-service farm store, which occupies a shed at the side of a barn. The store is open 10 a.m. to 5 p.m. on Saturdays and Sundays.

The farm offers half-gallon and 12-ounce bottles of white and chocolate milk. Lyness settled on those two sizes because he doesn’t have the demand yet to sell gallons, and he wanted a single-serving size for children and for agritourism events.

Spring Run Dairy milk is also available at about 10 other retailers, such as Norz Hill Farm & Market in Hillsborough.

New Jersey has 40 dairy farms, making it a relatively small milk producer. Neighboring New York and Pennsylvania, both top 10 milk producers nationally, have more than 9,000 dairies between them.

New Jersey’s dairy processing has traditionally been closely tied to its Mid-Atlantic neighbors. But with advances in refrigeration, milk from as far away as New Mexico can end up being packaged in the Garden State, said Fisher, the state ag secretary.

“The herds became so large that the economies of scale made it difficult for a farmer who has less than 500 cows to compete,” he said.

The average New Jersey dairy herd has 115 cows, compared to nearly 2,400 in New Mexico, per USDA.

The Federal Milk Marketing Order system needs to be reformed to help modest-sized dairies hold their own against big farms, Fisher said.

Still, Fisher and Lyness say that commodity and direct-marketed milk both have a place in their state. And they see New Jersey’s high population density as an asset to keep the industry vibrant.

“This is a rural part of New Jersey per se, but there’s still a lot of people around here to sell milk to,” said Lyness, who farms in western Hunterdon County.

And while having lots of homeowners nearby could mean lots of neighbors complaining about manure smells and dust, Fisher said that isn’t a problem in New Jersey.

“So many of these counties have had dairy in their midst for decades and hundreds of years,” he said.

Its reputation for endless suburbia notwithstanding, New Jersey also has a good amount of space for farming, especially in the state’s northwest and southwest, he said.

Lyness views his direct marketing as not just a business but also as an opportunity to educate the public about dairy. Like many dairy producers, he’s frustrated by perceptions that farmers mistreat their animals and are poor land stewards.

He also wants consumers to know that dairy products are nutritious and have a place in most people’s diets.

He recognizes that the consumption of fluid milk drinking has been declining, but he sees hope in the increase in overall dairy consumption. That growth is led by cheese and other manufactured dairy products.

“It’s not like dairy’s disappearing,” he said, “because we still have lots of products that people are consuming on larger scales.”

PITTSTOWN, N.J. (WPVI) -- As of last Friday, private planes were banned from taking flight in a 10-mile area surrounding President Donald Trump's golf club in Bedminster, New Jersey, and there are tight restrictions on airports, as far as 30 miles from there.

Though the restrictions may be temporary, those who make their living by flying say the economic impact may be felt for some time.

Small airport owners are being clobbered by these restrictions, and they're looking for some relief. Some have already lost half their business, while others have temporarily shut down completely.

On a sunny day planes would normally be flying in and out of Alexandria Airport in Pittstown, Hunterdon County. But the runway is silent.

Temporary flight restrictions in effect while President Trump vacations in Bedminster have turned the airport into a ghost town.

"People don't want to go to a place for business where they can't count on that they can take off tomorrow," said Alexandria Airport owner Linda Castner.

Airports within the 30 mile zone around Bedminster can do limited takeoffs and landings, but flight training, skydiving, gliders and sightseeing flights are prohibited.

"It's killing some businesses and it's hurting the rest of them. It's hurting those airports that have restricted fuel sales. Their bread-and-butter is selling fuel," said Bill Leavens of the Mid-Atlantic Aviation Coalition.

Small airport owners say four years of a Trump presidency could put them out of business. Others, like Skydive Jersey, a jump school at the airport, may not even make it until the end of the month.

"August is our busiest time of the year. It's absolutely. We normally are booked out weeks in advance but right now, even today I had to turn away a ton of people," said Tony Mabrey of Skydive Jersey.

Linda Castner is also concerned about the danger and cost of the F-15 fighter jets that go after planes intruding into the restricted airspace.

It's just a small speck in the sky, but you can hear the thunder of one of those jets as it forced a private plane to the ground on Sunday at Alexandria.

Castner and others want the feds to ease restrictions on local airports and prescreen pilots so they can fly when restrictions are in effect as they do near Washington DC.

"They gave them the waiver to do it. They vetted the pilots there. Why can't that be done here," asked Castner.

Castner says it's galling that President Trump's golf club thrives while some aviation businesses are on the brink of closing.

"Why is that business allowed to continue and ours and all those around us are not," she said.

HUNTERDON COUNTY, NJ - A small group of Hunterdon County high school students has organized an online gaming fundraiser March 27 to reward a friend for a selfless deed.

The fundraiser, a one-on-one tournament playing the popular game, Rocket League, will benefit Ian Hewitt, a Hunterdon County Polytech and North Hunterdon High School junior from Pittstown. Hewitt will donate bone marrow in April to his younger sister, Morgan, who is in a rare fight against two forms of leukemia: acute myeloid leukemia (AML) and T-cell acute lymphoblastic leukemia (T-ALL).

Hewitt's friends organized the fundraiser, “We Fight with Ian,” on his behalf ahead of his bone marrow donation.

Hewitt has taken on more responsibility since his sister’s diagnosis in September 2020, especially since his mother needed to be by his sister's side, often at the Children’s Hospital of Philadelphia, while his father maintained a night work schedule. Once Hewitt donates his marrow to his sister, he will continue to be separated from her and his mother for 100 days until she can leave quarantine.

“This is the hardest part for Ian, not being able to see his sister after giving her the gift of life,” said his mother, Barbara.

Ian Hewitt’s friend, Dominick Edwards, is hoping gift cards purchased through the fundraiser will lift his spirits and relieve some of the pressures that go along with the independence he has gained over the past year-and-a-half. Edwards will purchase gift cards for gas, as well as for area restaurants and Uber Eats.

“Morgan is certainly a hero for what she has endured and the remarkable fight she has put up since her cancer diagnosis, but Ian is also a hero,” said Edwards. “His heroics may not be as obvious, but he has stepped up so the family can focus on Morgan, and his upcoming bone marrow donation is yet another selfless way he is contributing to his sister’s fight.”

“I am so proud of my son for working hard to set this up with help from friends and family to support Ian and the Hewitt family,” added Gina Edwards, Dominick’s mother and an assistant in Hunterdon County Vocational School District’s Adult & Continuing Education program. “These kids, their loyalty and their empathy, make me so proud as a parent.”

Dominick Edwards is a junior in Hunterdon County Polytech’s Law Enforcement and Homeland Security program, and he has chosen a career path based on his desire to help others. Ian Hewitt is in Polytech’s Automotive Technology program.

Morgan Hewitt also is planning to attend the Healthcare Science program at Hunterdon County Polytech in the fall. She has amazed doctors with her positive responses to treatments so far and looks forward to starting the next school year in full remission.

The Rocket League fundraiser for Ian Hewitt runs March 27, from 3 p.m. to 5 p.m. Officially enter the tournament as early as March 20. To register now, obtain directions for joining the tournament or learn how to donate directly to the cause, email Dominick Edwards at [email protected].

There are tomato tastings and tomato weigh-ins around the state this month, but the Great Tomato Tasting in Pittstown is the one that puts you at the very heart of research into New Jersey's most famous crop.

The tasting set for 3 to 7 p.m. Aug. 26 at Rutgers' Snyder Research and Extension Farm draws its samples from the mother lode - acres of carefully tended farmland planted with 160 varieties of tomatoes. More than 60 heirloom and hybrid varieties of beefsteak, plum, cherry and grape tomatoes will be ripe for sampling at this year's event, along with new and more disease-resistant types of basil.

"We expect between 1,100 and 1,500 people," says John Grande, Snyder Farm director. "Our event is a little different because it began as an open house to give people insight into the basic of farming and agriculture. We also highlight the work of plant breeders, who spend years of passionate and committed research into developing better crops."

Grande, who has himself gone hunting new plant material in the mountains of Eastern Europe, explains that breeding programs have produced tomatoes with desirable characteristics such as disease resistance, improved harvests and the ability to withstand shipping stress. But the more recent trend toward buying and eating locally-produced food has created an opening for more fragile varieties that make flavor the primary thing.

"People are fascinated by the different old and new varieties rarely seen in supermarkets but now around in farm stands and farmer's markets," Grande adds. "Frankly, eating something of super high quality gives you a new standard for taste."

In an earlier era, Rutgers University worked closely with Campbell's Soup Company, established in Camden in 1869. That drove breeding programs toward tomatoes suitable for processing, says Peter Nitzsche, the Morris County agricultural agent who works with Rutgers' tomato development team. The fresh market wasn't neglected, but over time, many successful varieties from the mid-1900s fell by the wayside as higher yields and uniform appearance were emphasized.

In recent years, Rutgers has been reviving some of the real winners among its early hybrids - Ramapo became available again about eight years ago and Morton followed two seasons later. The latest project involves tomatoes bred from the same genetic material that produced Rutgers, another highly regarded variety. The Snyder Farm is among locations where the public can taste test the finalists vying to become the new Rutgers tomato.

Raising thousands of tomatoes that must ripen on cue for a major tasting is a little like growing flowers for a show where blossoms must achieve a peak of perfection "on the day." It's been a pretty good tomato season, Nitzsche says, with some heavy rain and high humidity bringing on a fair amount of fungal diseases like early blight and grey leaf spot.

It's nothing that will put a dent in the fun for those who come out for the Great Tomato Tasting, though. More than 100 local Rutgers Master Gardeners will be slicing up the harvest, setting out the salt shakers and serving up some sun-ripened goodness, rain or shine.

Come and join us for a wonderful afternoon in the picturesque hills of Hunterdon County, enjoying fabulous entertainment and supporting several worthy causes — the Hunterdon Art Museum, NJ Prevent, the Friendly Sons of St. Patrick - Hunterdon, Riding with Heart, the Toshiko Takaezu Studio Project and Valley Crest Farm & Preserve. The Hunterdon Polo Classic combines the equestrian sport of polo with family friendly tailgating, classic cars, traditional entertainment, tailgate and hat competitions.

The afternoon's entertainment is unlike any other in the area. The farm offers a stunning backdrop for an exciting game of polo and a day of exceptional tailgating. Many of the ladies wear dresses and wide brimmed hats, competing in the Best Hat Competition and Most Original Hat Competitions. Young ladies under 12 may compete in the Children's Best Hat Competition. Tailgaters compete for Most Original Tailgate, Best Gourmet Presentation, and Most Elegant Tailgate prizes.

Gates will open at noon for tailgating. Pre-match activities start at 12:30 pm with a performance by St. Ann's Pipes and Drums, a classic car parade and a live rendition of the National Anthem. The much anticipated polo match begins at 2 p.m., with an intermission at the half. Highlighting the intermission will be the traditional divot stomp, the hat parade and competition, a demonstration by the Tewksbury Foot Bassets and the Essex Fox Hounds and tailgate awards presentations.

The Quakertown Fire Company's raffle drawing will be held at the end of the match. The raffle will be followed by an awards ceremony, including team awards, MVP, and Best Playing Pony, the Bruce Nienstedt Perpetual Cup.

Excellent viewing opportunities are available from sideline tailgate spaces available for $200, $300, $500 and $1,250 based upon location and amenities included. Limited tailgate spaces are still available. General admission tickets are $35 per person, including parking, if purchased by June 8.. Children under 12 are admitted free. On the day of the event, tickets may be purchased at the gate for $45 per person.
