Freund’s Farm, Inc., established in 1949, is a 300-head dairy farm managed and owned by the Freund family. The cows are milked by five robots, which distinguishes Freund’s Farm as the first robotic farm in Connecticut. Second- and third-generation family members manage the daily production of 2,500 gallons of milk, operate Freund’s Farm Market and Bakery, oversee 10 acres of gardens and a 15,000 cubic feet greenhouse, and offer farm tours to the local community and visitors. A member of the Cabot Creamery/Agri-Mark Cooperative, Freund’s Farm is one of more than 1,000 family dairy farms in New York and the New England area that participate in the dairy cooperative.

The family’s long-standing interest in pursuing sustainable farming practices, initiated by Eugene Freund, led them to build one of the first, and now longest-running, anaerobic digesters in the New England area, which then sparked the concept for CowPots™. The focus on sustainability is not limited to the digester; more than 1,200 solar panels installed on the roof of the dairy barn and CowPots™ facility ensure that the farm is completely energy independent.

Producing Innovative, Biodegradable Planting Pots from Manure

In 1997, Freund’s Farm installed a plug flow digester during a complete rebuild of the existing waste management system. The purpose of installing the digester was to improve manure handling during the winter months, when the cows are kept in the barn, while also recovering energy. The farm needed the ability to separate fiber from manure during the winter and to store the liquid filtrate for irrigation.

After much research and trial-and-error over several years, the Freund brothers finalized a patented process for forming the digestate into biodegradable pots made out of solid manure. The CowPots™, which are 100 percent biodegradable, are naturally weed- and seed-free and dissolve into the ground after they are planted, leaving nutrients for young plants. Available as seed starters and transplant pots, CowPots™ are sold in 12 different shapes and sizes and can be purchased throughout the U.S. and internationally. Millions of CowPots™ have been produced at Freund’s Farm for customers in the United States and around the world.

About the Digester

The 64,000-gallon digester currently receives about 3,600 gallons of manure each day from 300 cows. After the original flexible cover failed, an uninsulated aluminum-framed greenhouse structure was built over the digester to collect and contain the biogas. When the biogas is collected, a slight vacuum is maintained to prevent the release of biogas outside the digester. A screw press separates the solids from the digester liquid effluent, which is then used as bedding material and for producing CowPots™.

Liquid effluent is stored in an 800,000-gallon storage pond and used as fertilizer on the farm’s croplands. The gas captured by the digester fuels a 400,000 British thermal unit (Btu)/hour boiler that, in turn, heats the Freund’s digester, milking parlor, farmhouse, and offices. Plans are under way to install a new digester to maximize the capture of biogas and effective nutrient management.

The damage deals a devastating blow to one of Connecticut’s treasured dairy farms. Elm Knoll Dairy is a key cog in the local agricultural landscape.

CANAAN, Conn. — While much of the state escaped the Nor’easter unscathed, the same can’t be said for a farm in Canaan. A dairy farm is picking up the pieces Wednesday following the sudden collapse of a barn.

But rather than sulk about the damage, the farmers at Elm Knoll Dairy instead, laced up their boots and got right to work. But they are certainly counting their blessings that no one was hurt, or worse.

FOX61 found them sifting through the rubble. It wasn’t what they had in mind.

“I was in here about a half hour before it fell,” remarked farm worker Logan Cables.

It happened at 6:30 a.m. Wednesday at Elm Knoll Farm in Canaan. A portion of their heifer barn collapsed under the weight of the Nor’easter snow.

“6:30 a.m. is the prime time when everybody comes in and starts to work here, so thank God nobody was in here,” said Cables.

But the farm did lose two cows who were just days away from giving birth.

“The part of the barn that’s destroyed are the maternity pens,” explained Dave Jacquier, the farm’s owner.

“It’s a pain in the rump. This will be a setback,” said Jacquier. “I called my insurance company this morning. It doesn’t look like it’s going to be too hopeful, but that’s how life goes.”

The barn houses about 400 cows. Most will be able to remain in the partially collapsed barn, but more than a dozen who are about to give birth will need to be relocated. Jacquier said he won’t let Mother Nature slow him down.

“You name it, I’ve had it happen. I’m 73 years old. I don’t have a thought of doing anything different but to rebuild this when I get time.”

Elm Knoll has been serving Connecticut's dairy needs for decades. There are only 67 dairy farms left in Connecticut. Jacquier told FOX61 every year it gets harder to survive. Farmers are facing inflationary pressure and reduced subsidy by the state and federal governments.

NEW CANAAN — Lines are getting longer in front of a privately-owned pharmacy in town where people have been receiving free vaccines since April, and now, boosters.

The line, which bent around the corner of Cherry Street and East Avenue Tuesday morning, started forming regularly in front of the town’s oldest drug store, New Canaan Pharmacy, around Thanksgiving, according to the store’s owner Premal Patel. The pharmacy, which was previously located on Main Street, has been administering vaccine doses and booster shots to nearly 120 people Monday to Saturday on a walk-in basis. Before Thanksgiving, Patel said he did not see regular lines outside of his store.

There has been an “uptick in cases,” said Henry Howe, 18, who was standing in line Tuesday morning.

Not long ago, he wasn’t sure he needed a booster. But recently, people he knew contracted COVID-19 despite having boosters, and he said he thought it was time.

His mother, Juliet Howe, said she expected to be “in and out” in a few minutes, but arrived to a long line.

“It starts getting crowded by 9:45 in the morning,” Patel said, adding he recommends residents arrive before 1 p.m.

The most challenging thing, he said, is when he has to turn people away. When the supply runs low, Patel said he may stop accepting walk-ins at around 1 p.m.

Even so, the owner said Monday he feels great that he “can do this for the community,” with the ability to offer Moderna, Johnson and Johnson and Pfizer vaccines and boosters. Patel said he often has more vaccines than he can administer and is “getting shipments on a regular basis.”

While New Canaan offers its own clinics through the Health Department and is offering boosters and vaccine doses at Vine Cottage and Irwin House, the town’s cases have been steadily rising since November.

The town reported 71 positive COVID-19 cases last week, up from 51, according the town dashboard, and the totals do not always include residents who took home tests.

First Selectman Kevin Moynihan said in weekly COVID update that it’s expected this upward trend in positive cases will continue “in the coming weeks in New Canaan and all of Connecticut.”

EAST CANAAN - When Lone Oak Campsites celebrated its 50th anniversary this month, it was not just a time to party and enjoy one of the top campgrounds in the state. It was also a time to recognize what can be accomplished with one man’s vision and a family’s strong-minded resolve to build a dream.

The hundreds of campers, past and present, who descended on the Lone Oak property on Aug. 16 for a ’60’s themed Woodstock weekend to celebrate the 50-year mark, would not have recognized the property if they had seen it all those years ago.

Abraham (Bucky) Brown was an East Canaan farmer with foresight. Family farms in the 1960’s were beginning to decline and many were selling out to large corporations.

After talking with other farmers and reading trade journals, Bucky decided that his farmland could be put to better use. So, in 1964, he converted part of his cornfield into campsites, and Lone Oak Campsites was born.

The transition was not an easy one. Brown had no experience running a campground, and even less money with which to run it, but he learned as he went along.

Late in 1963, he began clearing the land and the following year his first campers came.

Bucky soon gained a reputation for being a fun-loving and accommodating host. When campers asked for a place to swim, he sold pumpkins from his farm to raise funds to buy an excavator for digging a pond. When the customers in trailers began to outnumber those in tents, and Brown realized they needed sewer hookups, he dug the fields and installed the sewers.

For three years, Bucky ran the campground during the day and went home in the evening to milk the cows and tend to farm matters.

The hard work finally paid off, though, and in 1967, Bucky the farmer sold his cows and became Bucky the full-time campground owner.

The same year, Brown realized that the little pond he had dug was not large enough for the numbers of campers coming to Lone Oak, so he applied for a government loan to install swimming pools.

“The government lost the paperwork,” Brown says, “so it was another year before we finally were able to put in the pools.”

Since then, Brown and his sons, Peter and Barry, have added a recreation hall with a lounge, full-service bathrooms with showers, a hot tub, lodges and rental units and a store called Chipmunk Market, complete with a snack bar, famous for its loaded fries and soft-serve ice cream cones.

This month’s anniversary celebration was a time for nostalgia and reminisces. With more than 45 families who have been coming to Lone Oak for 20 years or more, there were lots of good times and happy memories shared.

Bucky, now 86 years old, reminisces about when he used to hire an airplane to drop peanuts on the campground. The person who found the most that were painted gold would win a prize.

“We had to stop that because the adults were rushing ahead of the kids to pick them up!” says Brown.

Lone Oak is now run by a second and third generation of Browns. Bucky retired in 1993 and handed the reins over to his sons, Peter and Barry, who, along with Barry’s wife Jacolyn and their son Alex, and Peter’s son, Cooper, operate the business.

With more than 450 sites today, Lone Oak lives up to its slogan of “Quality Recreation Through Family Camping.” Many of the people who visit the campground now used to come with their parents years ago.

“When the kids reach their teenage years, they sometimes don’t want to come camping with their parents anymore,” says Jacolyn Brown. “But we find that once these teenagers become adults, they are back here with their spouses and their own kids.”

Lone Oak is a true family saga, and a legacy for not only the Browns, but for all of the people they have welcomed to their farm-turned-campground over the years. It is a place where memories are made and lifetime friendships forged.

The lone oak tree for which the business is named still stands on Brown’s Lane, near the original cow barns where Bucky’s vision was born so many years ago.

She’d always liked beautiful things and—after earning a bachelor’s degree in art history at Skidmore College and a master’s in art history from Williams College—she went to work for about six years in the field of art, through museums and at Christie’s Auction House.

“I’ve always been interested in the art field—everywhere I traveled, I could always go to museums and look at everything,” Knox told NewCanaanite.com on Tuesday morning from a desk at the rear of Posh Home Décor Consignment at 33 East Ave. “I have everything here from—right over my shoulder is a 16th century Italian etching, which is very famous—everything from antiques to contemporary things. I vet things extremely carefully when they come in so that everything is sort of unique, different and good prices. Very marketable prices. With my background, it sort of circles around. It’s something you carry with you all your life. But I’ve always wanted to do this. It’s just that this is the opportunity that I have later in life to do it.”

She opened the shop in June and—perhaps because no local business is offering luxury consignment items in the way that Posh does—the response has been immediate and strong. With the closures in recent years of Severed Ties and The Silk Purse, no one else is offering a physical shop with Knox’s expertly selected paintings, decorative tables, candle holders, dishes, jewelry boxes, signs, pillows and other antique and contemporary items.

“It’s word of mouth,” Knox said of her growing clientele. “It’s a lot of my own contacts just from living here for years and years, and I have a lot of designers that are now coming in, and that’s a key market for me. Because not only do they have access to high end luxury goods, but they’re looking for those kinds of things. As you see, we’re not focusing just on things you can buy in Wayfair—and no judgment against those—these are more particular items.”

Knox has registered Posh as a member business of the New Canaan Chamber of Commerce. That organization’s executive director, Laura Budd, said the new high-end consignment shop “has filled an important hole in downtown New Canaan’s retail scene.”

“The consignment shop model for home goods is popular here in New Canaan and Christine’s business acumen and her sense of style is sure to make the store successful,” Budd said.

Many of Knox’s walk-in customers are women and there’s a long-established consignment clothing shop next door in DWR, “so we have synergy together,” she said. They’re both located on the first floor of what longtime residents will remember as the former Merit Music building.

“When people come in, I engage them,” Knox said. “It’s a relationship building business. As far as I’m concerned, I’m on the phone all the time. I’m talking to people. I say to everyone, ‘Please tell your friends about us,’ so the word has traveled. This is 99.9 percent consignment. I do buy some things.”

Knox noted that Posh is not designed to compete with online auctions.

“That’s where everybody’s cleaning out everything they have in their house, soup to nuts, garage items,” she said. “I am not that. I am here so that if somebody has five pieces, one piece, two pieces—very, very particular items for when people come into the shop. This is not a thrift shop. It’s a high-end consignment shop with a lot of luxury items.”

She added, “ I think it’s an exciting new business for New Canaan because that model did exist in the town for years. Then it didn’t exist anymore.”

Knox spent the bulk of her career in global corporate marketing after earning an MBA from the University of Connecticut. She worked for Estée Lauder and for DDB Worldwide, a large advertising agency where she was responsible for global strategic programming. It was a demanding job that saw Knox traveling nonstop for 30 years, so when she finally retired in 2019 she was ready to take some time off. Since then, Knox—who attended King Low-Heywood Thomas School while growing up in New Canaan, and later became head of its Alumni Associationjoined the local Encore Club.

That corporate background has also come into play in launching Posh, she said.

“It’s talking to people, it’s image making, it’s advertising, and so there’s a line that runs through all those things,” she said. “Those are the things that have always interested me.”

She’s finding that people are coming into Posh from all over the area—Trumbull, Pound Ridge, N.Y., Stamford, Darien, Fairfield, Bedford, N.Y., New York City.

Inside, they find “everything from antiques to contemporary objects,” Knox said.

“I have some Mid-century modern chairs that have authentication papers as if they were a pedigree dog,” she said. “I have everything from a beautiful 16th Century etching and a 19th Century tilt-top table, but a modern painting above it. So I offer everything, but it has to be an object that is unique, has good value, good condition, and is marketable to a clientele under market prices.”

Those selling through Posh are paid quickly under the business’s 50-50 split, she said.

“I’m extremely organized, conscientious,” Knox said. “I know every object in the shop, who it belongs to, track it very carefully. Everybody gets paid on time. So it’s a functioning model. They never have to worry about where their object is or how it’s going. They can call me. I can track every object that comes in the shop.”

Items that come into Posh and aren’t sold after a set period of time undergo mark-downs, she said.

For Knox, operating Posh is a return to what she’s loved to do since her college days— “beautiful objects, whether they’re paintings or furniture or, or whatever else value, the value in them, the history.”

“The history is very important,” she said. “I research everything that comes in. I can’t know everything, and I don’t know something offhand, I research it. And I know how to do the research because I was in that business for a long, long time.”
