“From that moment I started noticing spaces and gaps and pauses. I started making lists of them and decided that I would write a book for children, explaining how it’s okay to slow down and appreciate the power of empty spaces. In a sense we are all surrounded by these pauses during this pandemic — waiting for life to continue as it was.”

“Space Matters” is Schiller’s first book for children (and hopefully not her last) but she has been involved in creative endeavors since she was a child. And with her insatiable curiosity she is always discovering new paths to follow.

“I grew up in a very small town in Texas,” says Schiller, “which is probably why I then gravitated to a small New England town where I now live. I was the kid who was always up a tree reading a book or on my bike exploring, in my own head and my own thoughts. I always liked to write and I made cards for everyone.”

Schiller is a multitalented and eclectic person, perpetually seeking and trying new things. She has been a jewelry designer, a party planner, community volunteer, writer, and art lover, among other things.

“I like to say that I am an unapologetic dilettante and a self-described dabbler. My career path is dictated by whatever I’m interested in at a particular time. There’s always a creative element, but I like to think you don’t have to limit yourself. I believe one has to be curious. If you feel drawn towards something, seek and find out more about it. Stay open-minded and maybe climb a tree once in a while — with a good book (or postcard) in tow.

“I have a closet full of abandoned hobbies,” Schiller admits, “but I am never disappointed in having tried them. You never know what’s going to work out. That’s the best part.”

Schiller wrote “Space Matters” in a matter of weeks and then edited it down to the number of words required by her publisher. Meanwhile, the illustrator began her work.

“My publisher found the perfect person to work on this book,” says Schiller. “From the get-go Lydia understood what I was trying to say. I had written in the pauses and space breaks. You have to wait a second before you turn the page. You think you are looking at one thing and then you turn the page and it’s something totally different. I wanted to introduce deeper concepts, which the drawings represent so well.”

Lydia Nichols, the illustrator, easily interpreted what Schiller was saying because she, too, places an emphasis on shapes and spaces.

“Like most people who grow up to be artists of some variety, I spent a lot of time drawing as a kid and just never stopped. Shapes and lines are a language that just really makes sense to me, which is why I love working with them.”

Together the two women have created a work that is sure to attract children, engage their curiosity, and hopefully become a classic. And, of course, it will appeal to the child in all of us. The images are sharp and colorful and their charm is contagious.

Schiller, who spent some time in New York City, now makes her home in the wooded serenity of West Cornwall, with her husband Tom Schiller, himself an Emmy-Award winning writer and one of the original creators of “Saturday Night Live.” While the couple has not collaborated on a project, Schiller is looking forward to a time when they might.

Reviews have praised the book calling it “beautifully brilliant in its simplicity.” Because of the ongoing pandemic personal appearances to promote Space Matters have been canceled. However, on Saturday, Nov. 7 from 3 to 4 p.m., Schiller will be doing a book signing on the porch at The Wish House.

“The Wish House is a go-to spot for gifts, sometimes for myself,” says Schiller. “And owner Bianca Griggs is very supportive of artists in the community, so I am thrilled to be doing a socially-distanced event there.”

camouflaged among the trees, the green-stained wood home rests on concrete poles placed along a rock-strewn landscape. a direct connection with its surroundings has been created by anchoring the house to a large granite boulder which guides the design of the house. from the outside, visitors can get a glimpse of the interiors through a massive red industrial window, the same that becomes the screen to the forest.

R.S.V.P., in West Cornwall, offers one of the most unusual dining experiences in the Northeast. So unusual, in fact, that some of the restaurant’s regular customers have accused it of doing everything wrong. Everything, that is, except for the food.

“That’s because we don’t take credit cards, we don’t advertise, there are no menus, and we don’t have a website,” said Charles Cilona, who owns the restaurant with the chef, Guy Birster.

What R.S.V.P. has done right since opening in 2001 is offer authentic, freshly prepared French bistro cuisine in much the manner you might experience at a dinner party — a very elaborate dinner party at which a five-course meal is prepared by one host and served by the other.

Without a menu to serve as a guide, each dish arrives as something of a surprise, adding to a diner’s feeling of being a guest, rather than a paying customer. That sense is further enhanced by Mr. Birster, a French expatriate who entered the trade at the age of 14. His ability to assemble numerous courses, in an open kitchen so close to the tables that patrons can follow every swirl of his whisk and slice of his knife, is impressive in its combination of self-assurance, organization and skill.

Throughout the leisurely paced, three-hour meal, Mr. Cilona acts as both waiter and busboy, delivering dishes with a mixture of charm and terseness, the latter necessitated by an urgency to get guests their food while it is warm. With the exception of a dishwasher, who periodically performs minor prep work, Mr. Cilona and Mr. Birster do everything themselves.

While little about R.S.V.P. is typical, meals do follow a predictable format. First, there is an amuse bouche, sometimes simple, as in a speck-wrapped piece of Cavaillon melon, sometimes more elaborate, like a well-bronzed phyllo dough pouch of spinach, lardon and melted cheese.

A soup course follows. My favorite, over several visits, was a creamy one made with fresh mussels. The shelled bivalves were tender, an aura of saffron permeated the cream, which had a complexity contributed in part by parsley and a hint of white wine. Vichyssoise, on another night, was based on chicken stock and similarly rich with cream; I particularly liked the morsels of house-smoked eel and rounds of leek that protruded, like pieces of sushi, above the white broth.

Next comes a poultry course. Reflecting the greatest finesse was a plate of duck prepared three ways: a strip of apple-red breast meat; a puff pastry “sandwich” of duck foie gras, “buttered” with onion confit; and a savoy cabbage purse filled with duck confit, all bound together by a veal stock reduction enriched by brandy-soaked cherries. By comparison, fried chicken, served on a different occasion, seemed uninspired, despite being combined with an excellent won ton, crispy at the edges and stuffed with duck confit and melted fontina.

Of the third course, which features two to three varieties of fish, I especially appreciated the restrained treatment of skate, a simple pan-searing of the delicate flesh in butter, with capers and a trace of lemon. On the same plate, and generating a greater “wow!” effect, were a half-inch-thick disc of scallop crudo and a béarnaise-draped nugget of lobster, playfully resting on a brioche bed, with a layer of sautéed escarole in between.

After several rounds of multiple tastes per plate, the fourth course, involving just one piece of red meat — instead of several in different preparations — may come as a relief. Yet even the beef tenderloin on one night displayed a certain flair, having been rubbed with minced mushrooms and baked en croûte. Contributing color to that dish was a hollowed-out artichoke heart filled with garden-fresh peas.

Even more pleasing, on a different evening, was the rare sight of puréed Jerusalem artichoke, spiked with heavy cream and black pepper, alongside a medium-rare cut of veal tenderloin. The accompanying Calvados sauce, with chunks of apple and only a hint of Normandy’s native liqueur, was a model of subtlety. Most unusual of all, on another visit, was veal cheek, as fatty and decadent as beef short ribs, and just as succulent.

There was no letup with the desserts, all of which were magnificent. In sampling the chilled chocolate soufflé, plated with a brik-wrapped half peach (the core of the latter filled with vanilla custard); the fluffy-yet-dense chocolate mousse and fresh raspberries in a martini glass filled with a frothy sabayon; and the peach Melba set alongside a Napoleon oozing with chocolate sauce, I recalled the advice I received when making dinner reservations: Leave room by eating a light lunch.

Donkeys help Connecticut retreat center celebrate its rebirth after 5 years closed

[Episcopal News Service] Trinity Retreat Center has 55 acres in rural northwest Connecticut, a history that dates back more than 100 years, ties to a prominent New York City congregation and plans to reopen after closing five years ago.

And it has donkeys – five of them, going on six.

The retreat center’s directors, working with a rescue group, purchased four donkeys in January to help protect the center’s chickens from the foxes and coyotes that had been thinning the free-range flock. On July 25, one of the donkeys gave birth to a newborn, generating, even more, buzz for the center as it prepares to host a preview picnic on July 29 for the community in West Cornwall.

“Since they’ve come here, they do far more than protect the chickens. They’ve’ become part of the personality and energy of the place,” Joseph Rose, one of the directors, told Episcopal News Service.

Trinity Retreat Center, a mission property of Manhattan’s Trinity Church Wall Street, was happy to be able to rescue at least two donkeys that likely would have been sold for their hides. The plight of the donkey is being compared to that of the elephant and the rhino, animals slaughtered around the world to feed the appetite of a black-market industry. In the case of donkeys, they are threatened because their skin is coveted for its use in a Chinese medicine known as “ejiao.”

The retreat center paid $300 each for its donkeys. Then the directors learned two more donkeys were available and needed a home.

“It was kind of a quick decision, and we wound up bringing in four. And two of those donkeys we found later were pregnant,” Rose said.

He and his wife, Heidi Rose, the retreat center’s executive director, and their daughters are fans of Fox’s “The Simpsons,” so they named two of donkeys after characters on the show: Marge and Maggie. Marge is the donkey who just gave birth, and they named the newborn Lisa, after another character from the show.

The other two donkeys are Fern and Francine. Marge is thought to be the oldest of the group at about 4 years old. They arrived malnourished and showing signs of abuse, but they gradually warmed to the staff at Trinity Retreat Center.

Donkeys are known by farmers to be useful in the fight against predators, but there is even deeper significance in their presence here at the retreat center.

For starters, there are the biblical references to donkeys. In the Old Testament, a talking donkey appears in Numbers, and a donkey carries Jesus to Jerusalem in the Gospels. There also is a legend that the Gospel references are the reason the symbol of the cross can be found in the fur on donkeys’ backs.

Donkeys are significant locally, too. A previous director at Trinity Retreat Center kept donkeys on the grounds, along with other farm animals, in the 1980s, when the facility was used as a youth camp. Part of the barn is still set up to accommodate donkeys.

By the end of the 1980s, the facility had ended its use as a camp and transitioned solely to a conference center. It continued for two more decades to host groups from Trinity Wall Street, as well as local parish groups and nonprofits looking for a place to gather in a natural setting.

Trinity Wall Street chose to close the center in 2012 partly because of the expense of maintaining it, said the Rev. Daniel Simons. Over the years, it also had lost a clearly defined mission.

Simons, as one of the centers present directors, is working with the Roses to rejuvenate the center as a place where visitors can reconnect with God’s creation. And under its current rector, the Rev. William Lupfer, Trinity Wall Street is newly committed to supporting the retreat center as one of its mission property, Simons said.

“These are properties that are central to our mission. They cost a lot to maintain, and we gladly assume that cost because we have a compelling mission for all those properties,” Simons said.

The retreat has begun taking reservations, starting this fall. By then, there’s a good chance the sixth donkey will have been born, but the exact date is anyone’s guess.

“It’s a healing place, it’s a place of prayer and reflection, but it’s also a place where we want to have a sense of fun,” Joseph Rose said.

The donkeys embody that spirit, he said, adding that he thinks the animals have earned an unfair reputation for being dumb, stubborn and mean. Rose has found them to be very friendly animals and hard workers.

Well, part of their reputation might be justified.

“They can be a little stubborn sometimes,” he said.

In 74th place came the town of Chester, Connecticut. It’s located on the slopes of the Hualalai volcano, and derives its name from the traditional – if somewhat terrifying – local practice of sledding down the mountain on long, wooden sleds. If you enjoy a caffeine fix, you’ve come to the right place; Holualoa sits between the towns of Kailua-Kona and Keauhou, in the heart of Kona coffee country. 600 coffee farms surround it, and every November they hold the Kona Coffee Festival.

In at number two was Ely, in Nevada. This remote former mining mountain town, which sits at the base of the Great Basin National Park, was originally founded as a stagecoach station along the Pony Express and Central Overland route. You can still visit the nearby Ward Charcoal Ovens State Historic Park, where six, giant beehive-shaped ovens were used to process silver ore. Elsewhere, you can take a guided tour of the Lehman Caves, a massive cavern over 500 million years old in the Great Basin National Park, or do scenic hikes such as the Island Forest Trail or Bristlecone Pine Trail.

Not far behind at number three is beautiful Anna Maria Island on Florida’s Gulf Coast. Seemingly preserved in time, it showcases how ‘Old Florida’ used to be, with its pastel-coloured clapboard houses and old-timey storefronts.

Perhaps unsurprisingly, due to their stunning natural sceneries, both Hawaii and Alaska each had two towns (Holualoa; Old Koloa Town and Sitka; Ketchikan) in the top 10.
