Treasured Georgetown deli Booeymonger just wrapped up a decades-long run, and its quaint corner address will soon welcome fresh meat in the form of a burger-driven brasserie (3265 Prospect Street NW).

La Bonne Vache, which translates to “the good cow” in French, is a team effort between a pair of local culinary couples: vet chef Rob Aikens and his restaurant designer wife, Rachel, and Ari and Claire Wilder (Chaplin’s, Zeppelin’s).

“We decided we wanted to do a French brasserie with a unique twist with burgers as the entree,” says Aikens, a former protege of restaurant magnate Stephen Starr who’s led top kitchens across New York, D.C., Philadelphia, and London. The British expat’s 30-year resume includes extensive experience in burgers (Ghostburger, Dandelion) and French cuisine (Pastis). He says combining his shared love for both under one roof was a no-brainer.

“Corner brasseries are a local place to hang out, have a great bite, and meet your mates,” says Aikens.

The Aikens happen to live a block away and were always attracted to Booeymonger’s location nestled in its historic residential neighborhood. When the owner decided to close and find a new occupant, they pounced on the idea of doing a welcoming bistro with the Wilders.

“The stars aligned. Something was speaking to me about it, between the architecture and corner exterior,” says Rachel Aikens.

The fast-moving project came to fruition in a matter of weeks, from an inked lease to chef tastings and newly finalized menu. The team is targeting an early June debut for the 42-seat bistro that plans to pair French fare with beers, wines, and Champagnes at lunch, dinner, and brunch. Joining Aikens in the kitchen is John Kim, the former chef de cuisine at Starr’s Electric Lemon in NYC’s Equinox Hotel who recently relocated to D.C.

“We all believe in how special this place is and everyone is on board with what we’re going to do here,” says Ari Wilder, who’s curating the booze selection. “We want to appeal to all walks of life—men, women, and kids.”

Starters include duck liver mousse flanked with everything spice, brandied shallots, tart cornichons, and Comté cheese; shrimp and avocado cocktail; and salmon rillette with citron aioli, cucumber, and dill. Classic salads include a Lyonnaise topped a warm poached egg and bacon lardons.

The headlining list of burgers draws inspiration from iconic French dishes and flavors. The “bourguignonne,” for instance, features red wine-braised short rib, caramelized onions, and smoked bacon, while another loops in truffle brie. The “steak au poivre” comes with green peppercorn Cognac aioli, French blue cheese, and button mushrooms, while the “croque madame” plays with a fried egg, frisee, smoked ham, and melty gruyere. A vegetarian burger is built with roasted mushrooms and green lentils. Look for four burgers on the menu at any given time.

A small sandwich section piles proteins and French garnishes between a baguette. Shaved ribeye joins watercress, horseradish aioli, and vinaigrette, while pounded grilled chicken paillard comes with veggie crudités and green olive almond dressing.

Aikens revives his longstanding relationship with famous butcher Pat LaFrieda to build a beef blend for the bistro that brings a “nice little funk” to each four-ounce patty, he says. Aikens started consulting with LaFrieda back in 2010 in Philly, where he opened the British-styled Dandelion pub for Starr with a mission to perfect the cheeseburger (in 2013, Philadelphia magazine crowned his gastropub burger the best in the city).

More recently, he helped build D.C. pop-up Ghostburger into a pandemic-era success (he’s no longer involved with its permanent Shaw location in the old home of Oaxacan-themed Espita Mezcaleria, where he also worked starting in 2017). Before that, he was head chef at Rockefeller Center’s fancy Rainbow Room. NYC came calling again in 2019, when Starr tapped Aikens to reboot his high-profile Parisian bistro Pastis in the Meatpacking District and open Eastern European-French showpiece Veronika inside a Swedish photography museum.

He officially left Starr’s hospitality group this year, but he’ll soon reunite with the James Beard Award-winning restaurateur on a neighborly basis. Starr is on track to replace Georgetown’s Dean & DeLuca with an Italian market this year, building upon his growing D.C. empire that includes steakhouse St. Anselm and perennially packed Parisian staple Le Diplomate.

The D.C. restaurant industry is in the midst of a full-blown French food revolution as of late, seeing a surge of new arrivals like Le Clou, Petite Cerise, and L’Avant-Garde, to name a few.

For Aikens, the cuisine has never gone out of style. “I’ve loved French food since I was a kid— I was introduced to it at the age of eight,” he says.

La Bonne Vache’s short desserts section sticks to Francophile favorites like a silky chocolate mousse dotted with cocoa nibs and Chantilly cream-filled profiteroles, with cookies in chocolate chip, salted peanut, and almond-sable jam varieties. Prices are pretty cheap by Georgetown standards; most menu items are $12 or under.

The renovation retains historical elements like Booeymonger’s tin ceiling, and small edits include adding bistro-styled chairs and a fresh new coat of white paint across the brick facade. A sealed side door will pop open to life as a takeout window, joined by outdoor tables framing the exterior.

The building’s owner happens to come from a long line of butchers and cattle ranchers. Artistic odes to its black-and-white namesake will be aplenty, between cute cow accents and old-timey family photos on the farm.

“It has amazing bones and felt like a brasserie already. You walk in and it feels like a million memories are already there, we’re just adding to it,” says Rachel Aikens.

Eighteen D.C. restaurants have been added to the prestigious Michelin Guide this year — and two more were just honored with a Bib Gourmand award.

Michelin announced Wednesday that Yellow, a Middle Eastern cafe in Georgetown, and the Mexican restaurant La Tejana in Mount Pleasant, have received Bib Gourmands, which Michelin’s anonymous inspectors award to restaurants offering “food of great quality at a good value.”

The pair joins nearly three dozen other local eateries sporting Bib Gourmands, including Oyamel, Jaleo, Federalist Pig and Hitching Post.

Michelin also awarded Bib Gourmands to 11 restaurants in New York and six in Chicago.

Yellow got its start as a pop-up inside the private dining room of Albi, chef Michael Rafidi’s Michelin-starred restaurant in the Navy Yard and in 2020 opened in its own space next door. That location has since closed, following the opening of its Georgetown location last year. Rafidi plans to open a second Yellow outpost in the Union Market neighborhood next year.

Here’s what Michelin’s reviewers had to say about Yellow: “Chef/owner Michael Rafidi and team are behind this daytime casual concept, where Levantine cooking takes center stage thanks to a wood-burning oven. It’s always humming here, where long lines form for pastries, breakfast sandwiches or shashuka in the morning as well as pita sandwiches, spreads and sides.”

La Tejana, which opened in August 2022, has made a name for itself selling breakfast tacos. It is run by the husband-and-wife team of Gus May and Ana-Maria Jaramillo. Michelin said the tacos “offer a singular kind of satisfaction, each one made with a superb flour tortilla kept warm in tightly wrapped foil. Fillings include soft scrambled eggs, creamy pinto beans, queso and meats like bacon, chorizo and even brisket.”

The current Michelin Guide lists 134 restaurants in the D.C. region., 20 of which have one star and three, Jônt, minibar and Pineapple and Pearls, boasting two. The lone restaurant in the broader D.C. region with three stars is the Inn at Little Washington in Washington, Virginia.

Michelin has yet to announce which restaurants added to its guide this year will receive a star, or perhaps stars. Those honorees will be revealed Nov. 7 at the North American Michelin Guide ceremony in New York. Last year, four of the 22 local restaurants added to the 2022 guide ended up receiving Bib Gourmands and one, Oyster Oyster, earned a coveted star.

While it might be chilly outside, that isn’t stopping local residents from indulging in some new frozen treats.

La Diperie recently opened its doors in the Georgetown Market Place food court and is offering soft serve vanilla ice cream that can be coated in a large variety of different dips made from Belgian chocolate. Flavours run the gamut from milk and dark chocolate to birthday cake, s'mores and more. Toppings can be added as well to further customize your cone.

“What we are trying to do is offer an experience to our customers,” said local franchise co-owner Alpesh Shah, noting the La Diperie brand is known for its rich-flavoured Belgian chocolate.

The dessert parlour offers a variety of other products, including donuts and waffles that can be customized with toppings, cheesecake slices from the Cheesecake Factory, Tiny Tom donuts, bubble tea, milkshakes and hot chocolate.

Shah said they have ice cream cakes that differ from the traditional in that they also contain cake, not just ice cream.

Those who are vegan or lactose intolerant have some options here as well with products like ice cream bars made from soy and coconut milk, sorbet and more.

“When customers come, we’ve got something for everybody,” noted Shah.

He and his wife opened their first La Diperie location on Queen Street East in Toronto in 2018. The business man said they were inspired to get into the ice cream market by their two children, who like most kids, have a strong penchant for the sweet, cold treats.

With Shah’s business partner loving his experience in the local community as the owner of Grind Hamburgers on Guelph Street, bringing the unique ice cream shop to town was an easy decision.

“We’ve received so much positive feedback since we opened. We can’t thank the community enough,” added Shah.

And while launching during the cold winter months might seem like a tough go for an ice cream business, Shah said that hasn’t been the case for La Diperie.

“You would be surprised at how many orders we receive for delivery,” he said. “Ice cream was a seasonal thing, but not anymore.”

La Plaza has a slew of offerings, including an extensive meat counter, homemade corn tortillas, a Mexican bakery, fresh produce and homemade meals made fresh each day. Mexican products, such as candies, drinks, sweets and chips, can also be found at the store.

Montes, whose children Marycielo and Ivan Benitez help her run the business, said everything in the store is imported from Mexico or Central American countries to ensure authenticity. She said her favorite thing that they sell is the fresh meats selection because they typically have more offerings than chain grocery stores.

“A lot of places just have fast food everything, and it is really chemically made,” Montes said. “We try to have everything fresh so that people can find that type of food that’s good for you.”

Marycielo said beyond offering groceries, the business looks to share its culture and contribute to the Georgetown economy through local business ownership. She added that prior to La Plaza there was not a business in the city that offered Hispanic foods to this extent. She said she hopes having a Hispanic grocery store closer in distance will encourage people to stop in and learn about what it has to offer.

“We want to show other people our culture ... and offer people different types of food,” Marycielo said.

Dr. De La Cruz is a fellowship-trained breast surgeon who specializes in advanced breast surgery procedures, including wireless lumpectomies, hidden scar technique, oncoplastic breast conservation, and nipple-sparing mastectomy. Dr. De La Cruz's story Dr. De La Cruz, 39, started her journey towards becoming the youngest Latina woman to lead a breast cancer surgery program at a major academic medical center at young age. As the daughter of international physician researchers, she spent a lot of time in labs where her parents worked, sparking her passion for medicine and "making a difference in people's lives." She grew up in Cuba, Mozambique, Spain, and Miami.

In college, she studied abroad in the Dominican Republic at the Universidad Central Del Este School of Medicine, where students were involved in patient care very early in their education and training. There, she completed her medical degree, founded an American Medical Student Association chapter and raised scholarship funds to help those who couldn't afford tuition.

After graduation, she was told becoming a surgeon would be nearly impossible as a foreign medical graduate and a female. Despite this, De La Cruz obtained research fellowships from the University of Miami and George Washington University in Washington, D.C. She continued her journey by obtaining a one-year residency internship at Jackson Memorial Hospital at the University of Miami, where she earned the Intern of the Year award and an AOA medical honor society membership for her dedication to medical student teaching. During her residency, she worked on an award-winning oncologic outcomes research project for nipple-sparing mastectomy that continues to be cited worldwide.

That same year, Dr. De La Cruz started her breast surgery fellowship at the University of Pennsylvania. Following graduation, she worked in private practice for a year before returning to the University of Pennsylvania as a faculty member in the associate program director of the breast cancer surgery fellowship program.

After relocating to Washington, D.C., to be close to her family, she founded the breast cancer fellowship program curriculum at the Inova Health System. Now at MedStar Georgetown University Hospital and The Betty Lou Ourisman Breast Health Center, she continues to teach residents and fellows, pursue research, and care for patients – the fulfillment of her lifelong dream.
