I don’t know how my mom first discovered La Provence but I’m glad she did. Now, whenever I feel the cravings to have a soy latte I head on over to La Provence. I sit and enjoy my coffee (with a heart drawn on the foam – cute!) and watch all the different people: professionals grabbing a quick bite, retirees reading ...

I sit and enjoy my coffee (with a heart drawn on the foam – cute!) and watch all the different people: professionals grabbing a quick bite, retirees reading the paper, new parents pushing their baby in a stroller, and tourists taking a nice break from their adventures.

French Bakery, La Provence sells delicious high-end desserts and pastries. La Provence is more than a bakery, they have a wide selection of tasty sandwiches and salads making it a perfect spot to grab lunch on a busy weekday. I recommend La Provence for big groups. With their varied menu, you can be sure everyone will find something they like. They also have welcoming, friendly staff that make you feel good about stopping by.

La Provence is located on the bright and cheery corner of Ponce de Leon Boulevard and Giralda Avenue. All of its outer walls are lined with windows giving it a warm vibe. As soon as you walk in you see a big display filled with deliciously tantalizing French goodies.

Menu Recommendations

Breakfast: Swing by on your way to work to grab a breakfast croissant made with scrambled eggs, ham, cheddar cheese, and swiss cheese served with a side salad. Other best selling breakfast options include french toast, pastries, coffee or freshly squeezed orange juice.

Lunch: I recommend their tricolor salad made with bow-tie pasta, tomatoes, fresh mozzarella cheese, avocados, and roasted pine nuts drizzled with basil pesto or balsamic glaze dressing. Gloria, the store manager, recommends their cobb salad with mixed greens, avocados, bacon, grilled chicken, blue cheese, boiled eggs, tomatoes, and ranch dressing. All their salads are made with fresh vegetables and ingredients, which I don’t find often at restaurants. Sometimes I order a salad at a restaurant and I get sad wilted greens – you won’t get that here. I also recommend their chicken avocado sandwich (because AVOCADO) and their caprese sandwich on panini bread. Yes, I love fresh mozzarella! A customer also mentioned that they love the French onion soup La Provence offers on Fridays. I’m definitely going to stop by and try that out.

In terms of pastries, I have tried their dulce de leche muffin and the center is LOADED with dulce de leche. They definitely do not skimp on the sweetness. Other best sellers to try include their almond croissants, chocolate croissants, blueberry muffins, eclairs, royals (chocolate mousse), and their napoleons (layered flaky pastry with vanilla custard). To keep their French breads authentic, La Provence brings all the main ingredients directly from France and trains all their bakers in French baking techniques. They bake all products fresh every day using only natural ingredients.

The main attraction of the auberge is undoubtedly its restaurant, the proud holder of a Michelin star since 1995. It draws food lovers from all over the world for its refined and creative cuisine. And, remarkably, there’s not a speck of gluten to be found anywhere, even in its many homemade breads.

Why no gluten? Let’s find out—it’s a fascinating story.

Since its beginning, the restaurant had been run by Reine Sammut, one of France’s top chefs and one of the rare women to be honoured with a Michelin star. She created what she calls a “Mediterranean cuisine,” influenced by the many countries that border that wide sea. In the last few years, Reine has handed the reins to her daughter Nadia, another talented chef who has cooked in restaurants all over the world. Reine remains active in the restaurant but Nadia has made a number of changes, some subtle and some unmistakable.

About ten years ago, Nadia became very ill and doctors determined that she has celiac disease, a severe gluten intolerance, as well as an intolerance to lactose. This is a big problem for a chef! But the resourceful Nadia, who is also a trained chemist, decided to team up with her mother and convert the restaurant’s menu to make it entirely gluten-free. The menu is also nearly lactose free, though you can still order a cheese course and get milk for your coffee and things like that.

This menu conversion was quite a risk, to fundamentally change an approach that had been successful for decades. And it wasn’t without tension, because how do you tell your mother she needs to change? But Reine and Nadia persisted and three years ago the menu became entirely gluten-free.

Then came the big questions: what would the inspectors from Michelin think? And would customers still come?

The news was good on both fronts. The people at Michelin loved the new menu and the restaurant kept its coveted star, making it today the only completely gluten-free restaurant in the world so honoured. And customers continue to flock to Fenière for its delicious food, with most of them not even realizing that it’s gluten-free!

This new approach to cooking means not only changes to recipes, but also changes to the way ingredients are sourced and prepared. “The challenge is that gluten is found in so many places where you wouldn’t expect it,” explains Nadia, “like bouillons for sauces or chocolate for desserts. Even things that you would expect are ok, like chickpea flour, is often milled on equipment that also mills wheat, so it becomes contaminated.”

“The answer is what I call pure food. We source directly from local farmers as much as possible and work closely with them to make sure that they meet our standards. We even mill our flours ourselves—chestnut, oat, buckwheat, and others. Then we start from these pure ingredients for all of our dishes. And we cook at a low heat to retain all of the freshness and goodness of these wonderful ingredients. The result is pure flavours.”

And what flavours! A recent menu included a “bourbouillade,” a kind of stew made of whole baby artichokes in a broth with onions and herbs—the artichokes were so tender you could cut them with a fork. Another dish featured bacon from a special breed of pig that roams wild in the nearby countryside. The meal was topped off with a Paris-Lourmarin, Fenière’s version of the famous dessert Paris-Brest—a rich layer of thick whipped cream between two flaky crusts. At Fenière, the whipped cream is made of almond milk (homemade, of course) and the dish is so good that once you’ve had it, you may never go back to Paris-Brest again.

Bread is a specialty at Fenière and is one of the highlights of any meal. And interestingly, the chefs there use an ancient technique to keep their breads moist—cooking them in clay pots. Gluten-free bread tends to be dry, because gluten is what helps retains moisture. But it turns out that back in the olden days, our ancestors had the same problem because wheat had less gluten in it at the time. So they came up with the trick of using clay pots and Fenière does the same thing. What’s old is new again.

Besides the gourmet restaurant, Fenière also has a fun bistro that serves lunch and dinner, plus a Sunday brunch. It’s in a rustic, relaxed setting, just perfect for the casual fare it serves. And for guests lucky enough to stay in one of the auberge’s rooms, the morning breakfast buffet will definitely start the day off right, with a wide variety of fresh juices, breads, jams, fruits and nuts, plus eggs, prosciutto, yogurt, and chia pudding.

Nadia wants to change the world and her vision extends far beyond Fenière. She has started a movement she calls Cuisine Libre (Free Cuisine), training other chefs in her approach to cooking. The famous Parisian baker Eric Kayser, for example, developed some of his bread recipes in collaboration with Nadia. She also gives cooking classes and has started her own bakery, and a book on Cuisine Libre will be published next spring. She is certainly keeping busy!

Many people today hear “gluten-free” and think “ick,” but that needn’t be true. One visit to the Auberge la Fenière will change their minds in a hurry.

Between the sea and the ponds of the Camargue, several beaches welcome holidaymakers to Saintes-Maries-de-la-Mer.

The Clos du Rhône beach, located further west, is divided into several coves protected by dikes. Although it offers a family atmosphere, it does not have a first-aid station.

The Crin Blanc beach, about 600 meters long, is located a little off the road. Private beaches offer mattresses for rent and allow you to have lunch, dinner or a drink with your feet in the water.

Close to the city center, the Arena beach is equipped with a first-aid station open in season, as well as toilets and showers. Dikes protect it from winds and waves.

Further east, a last supervised beach awaits lovers of swimming and sunbathing. It also hosts several straw huts.

The wild beaches of the Camargue

The Camargue, between land and sea, is an invitation to escape with its large natural and open spaces. The beaches of Saintes-Maries-de-la-Mer are no exception to the rule and for the most part embody the idea that one can be at the end of the world.

By taking the road to the Gacholle Lighthouse, you will pass along large stretches of deserted sand and manage to find an isolated and wild corner, even in the heart of the summer season. Your day at the water’s edge takes on an adventurous air: bring water and a parasol to protect you from the sun, and enjoy the sea that awaits you as far as the eye can see.

Water Activities

Mais pour produire du vin de qualité, risque-elle d’atteindre son point de rupture? Parue cette semaine dans la revue Nature Reviews Earth and Environnement, une étude le confirme (lien en anglais). Le changement climatique est déjà en train de bouleverser la cartographie mondiale du vin. D’ici la fin du siècle, certains des vignobles historiques sont menacés.

"Environ 90% des régions productrices de vin de l’Espagne, l’Italie, la Grèce et le sud de la Californie pourraient risquer de disparaître d’ici la fin du siècle, à cause de sécheresses excessives et de vagues de chaleur plus fréquentes."

Pour prendre une image, le changement climatique aura pour effet de faire glisser la cartographie favorable au vignoble vers le nord. De même qu’il a déjà fait glisser dans l’été les dates de vendanges. "La vigne est un très bon marqueur de l’évolution climatique", observe Benjamin Bois, co-auteur de l’étude et maître de conférences à l’Université de Bourgogne. Notre région est sur une ligne de front.

En quoi cette étude est-elle originale?

Benjamin Bois: Cette étude est une synthèse de la littérature scientifique sur le changement climatique et la vigne, en explorant l'évolution géographique des potentialités pour la production de vin à l’échelle mondiale. Je ne crois pas que de précédentes synthèses aient atteint ce niveau d’exhaustivité sur l’étude des risques et opportunités à l’échelle planétaire.

De tout temps, les vignerons ont été en prise directe avec les conditions climatiques.

La vigne est un marqueur du climat. L’étude sur des dates de vendanges depuis le 14ème siècle permet de reconstruire une évolution des températures.

Les dates de récolte sont l’un des outils pour estimer la température qu’il faisait dans le passé, avant l’apparition des thermomètres.

La vigne est donc un très bon marqueur de l’évolution climatique. Depuis une dizaine d’années, le projet LACCAVE, mobilise une vingtaine d’équipes de recherche en France. Elle a permis d’identifier, en lien avec la profession viticole, un très grand nombre de stratégies de réponses au changement climatique à horizon 2050, adaptées aux différents bassins viticoles français.

L’étude établit une notion d’inaptitude? De quoi s’agit-il?

Dans l’étude, nous parlons bien de potentialités. Il ne faut pas considérer que cela signifie la fin de la viticulture, mais un défi à venir. Les régions méditerranéennes, et leurs vignobles, sont celles qui seront le plus affectées par le réchauffement. On a une sensibilité d’autant plus marquée, que certaines variétés plantées ne sont pas bien adaptées à ces climats. Je citerais le merlot, qui apprécie les climats tempérés.

Ce défi est d’autant plus grand qu’on ne parvient pas à limiter le changement climatique.

On arrive donc à une limite?

Si la chaleur et le stress hydrique sont plutôt une bonne chose pour la production de vin rouge, on touche aux limites. Pour la production de rosés, on essaie de préserver des couleurs très pâles, or les faibles pluies et la chaleur favorisent la coloration du vin. Cela demande une grande adaptation et une grande anticipation. Ni le Var, ni le Languedoc ne font exception.

Les arômes changent, pas forcément de manière négative, mais le profil du vin évolue.

La bonne nouvelle est qu’on produit du vin dans des régions bien plus chaudes que le bassin méditerranéen (en Australie, en Californie). Plus on récolte tôt, au cœur de l’été, plus il faut surveiller le raisin comme le lait sur le feu. La maturation va très vite, si on laisse passer quelques jours, on n’a plus les potentialités optimales du raisin.

L’étude est très réservée sur l’irrigation. Pourquoi?

Dans plusieurs régions dont la vôtre, l’irrigation est pratiquée avec parcimonie. Ce n’est pas le cas partout.

Est-ce raisonnable d’apporter de l’eau à une plante comme la vigne, dont la capacité d’adaptation à la sécheresse est tout à fait remarquable?

Si l’eau vient à manquer, il faudra arbitrer avec d’autres activités humaines, comme le tourisme ou tout simplement pour les besoins domestiques. Dans ce cas, pas sûr, que la viticulture ne soit prioritaire.

Il faut d’abord mettre en place toutes les techniques d'adaptation, pour éviter le recours à l’irrigation, et éviter de rentrer en concurrence avec les usages de l’eau pour les populations.

Comment?

En Méditerranée, la culture ancestrale de la vigne en "gobelet" est particulièrement adaptée à la sécheresse. Les vignes ne sont pas reliées les unes aux autres, mais espacées. Le feuillage est plus réduit et les plants sont individuels.

Bien sûr, cela induit une baisse des rendements, mais c’est une production plus viable avec le changement climatique.

Certains abandonnent des pratiques ancestrales d’adaptation pour des méthodes plus productivistes. Plantée en rangs, comme une haie, la vigne a une surface foliaire plus grande. Mais s’il y a plus de feuilles, la vigne sera plus gourmande en eau.

Cela peut surprendre, le nord de l’Europe gagne en potentiel.

Il y a une ouverture sur les régions du nord de l’Europe. Certes, il ne faut pas aller trop vite en besogne. Même si on a déjà de la vigne en Suède, cela reste anecdotique et les potentialités y resteront très limitées dans les prochaines décennies. En revanche, plus au sud, les vins belges se développent rapidement, également en Bretagne, en Normandie ou dans les Hauts de France, où des projets viticoles se développent déjà.

Dans le courant du siècle, des potentialités s’ouvrent de manière assez flagrante. À l'échelle mondiale, elles se situent plutôt au nord de l’Europe, en Allemagne, aux Pays-Bas. Même le nord de la Pologne, sur une frange maritime. Dans le nord du continent américain, c’est très différent, car les hivers sont encore très froids.

Et localement?

Les territoires ont une diversité géographique très riche. À proximité de la Méditerranée, la vigne bénéficie d’une régulation thermique. Quand on est dans le Haut- Var à 600 ou 800 mètres d’altitude, on garde de la fraîcheur.

De nouveaux terroirs vont émerger, avec de nouvelles potentialités. Pourquoi pas des coteaux exposés au nord, alors que ceux des versants sud, dans les terres, à basse altitude seront les premiers à souffrir. Car ils ne bénéficient pas de la régulation thermique de la mer, ou de la fraîcheur d l’altitude

Je suis sûr que vous allez trouver des vignerons qui sont très contents du climat actuel et qui font des vins excellents car ils ont planté des vignes dans des positions topographiques favorables.

Nous ne sommes pas devant une condamnation de la viticulture sur la région méditerranéenne, mais une redistribution des cartes et des potentialités, à laquelle la profession va faire face.

Ces cinq musiciens talentueux forment le groupe "Les cigales engatsées" et produisent un rock-trad provençal puissant, festif et singulier, librement inspiré des débuts du mouvement punk rock. Leur musique mêle instruments traditionnels comme le galoubet ou la vielle à roue et chant en provençal dans un spectacle intergénérationnel avec un seul credo : "faire danser qu'importe d'où tu viennes".

Le groupe a déjà joué avec passion dans de multiples endroits : festivals, concerts en plein air, en salle, privés, bars, pubs, fêtes de village… pas moins de 50 villes à leurs actifs. "La musique exige de la discipline"

"Je ne suis pas que chanteur" explique William, "je joue également de la vielle à roue, qui est un instrument à cordes, frottées par une roue en bois au lieu d'un archet. La roue est tournée avec une manivelle de la main droite, pendant que la main gauche joue la mélodie sur un clavier. C’est un instrument avec lequel on peut jouer du rock progressif, du traditionnel, du tribal ou encore de la musique d’inspiration celte. J’organise également des conférences afin de mieux faire connaître cet instrument qui a plus de mille ans".

La popularité des Cigales ne fait que croître et leur démarche vise la transmission du patrimoine culturel aux jeunes générations "Notre groupe commence à être connu et nous sommes de plus en plus sollicités. Les morceaux joués sont très techniques, ce n’est pas une musique simple et cela représente beaucoup de travail et de concentration. Au même titre que le sport, la priorité c’est la régularité. La musique est un véritable exécutoire, un bon moyen de s’évader !"
