For barbecue lovers, Lexington, North Carolina, is considered hog heaven. Located just south of Winston-Salem, Lexington’s claim to fame as the Barbecue Capital of the World spans more than a century. Sid Weaver, known as the Lexington-style barbecue pioneer, first introduced his barbecue in 1916, smoking it under a tent-covered pit on an Uptown Lexington street corner. Others followed, and the signature style took off.
Today, Lexington’s unique style of barbecue continues to reign in the central part of the state. While other styles take advantage of the whole hog, Lexington-style barbecue centers on the pork shoulder, which is pit-smoked low and slow over hickory and oak. It's typically served chopped or sliced and finished with a drizzle of tomato-and-vinegar-based sauce called a dip. The traditions of this ’cue call for a side of red slaw, a tangy vinegar-based coleslaw lightly tossed with a hint of ketchup.
Here, it’s no surprise that pigs are celebrated at every turn. Pigs in the City, a public art initiative that goes back more than 20 years, features a collection of hand-painted pigs displayed throughout Uptown Lexington and around the city square.
